Would you recommend Swiss Diamond Induction Pans for cooking at very high temperatures?

Posting date: 4th March 2009 18:08

All Swiss Diamond Pans including the induction range are for use at a medium heat. At high temperature, the cooking surface can discolour, darkening in places. This does not affect the non stick qualities of the pans, but it does not look as lovely as it did!

Additionally, you must remember that Swiss Diamond Induction should not be used on a naked flame hob, like a gas hob, as this potentially damages the special magnetised layer in the base over time.

Mauviel M 'Cook, I am assured by the UK importers, can be used at any heat without affecting the pan. So if this is your most important criteria, then I would recommend the M'Cook which are usable on an induction hob. They are outstanding pans.

Best wishes, Claire>
