Advice on Induction Frying Pans

Q Can you recommend a Stainless Steel Induction Frying Pan with a Glass Lid?
A I would have recommended the Mauviel M'Cook range - suitable for induction as it has a magnetic layer of stainless steel in the base. The pans are stainless steel but also have layers of aluminium within the base because this improves the heat conductivitiy of the pan. However, the lids available are not clear glass but stainless steel. Let me know if this still interests you. You could buy the pan and then go to a cookshop and literally try each glass lid you can find to see if you get a tight fit, but I appreciate that this is not ideal. The M cook come with etiher a stainless steel surface or a non stick surface
Otherwise, if you are interested in low fat cooking, I would recommend heartily recommend the Gastrolux range which does come with a steam vented, glass lid. However, as you have probably already worked out it currently does not come suitable for induction cooking. A Gastrolux induction pan is being tested as we speak at the Danish Institute of Technology and we are waiting to hear whether it has passed. The Gastrolux is a cast aluminium pan, however, not stainless steel. I suspect that it will be some time before the Induction range comes out.
Finally, you could try the Swiss Diamond induction range - again a cast aluminium pan but very good for low fat cooking. Although the web site does not say to comes with a glass lid, I can get one for you to fit the 24cm fryingpan
The price for a matching lid would be £16.99.
