Q Why is a Mauviel M'Heritage Frying Pan with bronze handles more expensive than the one with cast iron handles?

A This is a good question. The earliest Mauviel M Heritage Cookware (then called Cuprinox) had the cast iron handles only. The pans were primarily used in the professional or restaurant sector, rather than by domestic cooks. The copper gauge on the cast iron pans is between .5 and 1mm thicker than on the bronze handled pans and the cast iron pan handle is heavier and bigger.

Mauviel brought out the Mauviel MHeritage Bronze Handled pans mainly for domestic users. The pans are lighter and so can be easier for the older cook to handle. The bronze handle is smaller than the cast iron handle and aesthetically suits the pan better. So the difference in price reflects all these issues.
